I thought I´d share a great recipe with you that I eat often for lunch due to it being fast, healthy and delicious;=)
These pancakes are called Cottage cheese pancakes and this recipe is for 1 person:
125 gram of cottage cheese
0,75 tablespoon of psyllium seed husk
A pinch of salt
Mix all ingredients with a hand mixer so the cottage cheese gets less corny.
Fry in coconut oil or any choice of fat on middle temperature slowly for some minutes on each side. Be sure you have a good frying pan.
Serve with you choice of topping. I make a toast of it mostly with cheese, smoked turkey breast, fresh tomato and mustard. But it´s really nice for breakfast with quark with some Stevia and vanilla powder and then raspberries.
