X-mas is approaching

It´s that nice time of the year when 1st of Advent is approaching and the whole city is preparing for X-mas with putting up different lights everywhere. And also the big X-mas tree was placed in its position in our big square by the walking street Kullagatan yesterday morning;=)

Studio all weekend;=)
Hi all,
I´ve had a very productive and wonderful weekend locked into the studio doing all those last vocal stuff that is like the icing on the cake when doing an album. Harmonies, ad libs and even some gospel choir stuff;=)
On my way to the studio today...;=) I really love that todays technologie make me able to stay here where I live and do my recordings and then just send the files to the producer. Must say I appreciate modern technology!
My dear SHURE microphone that gives my voice the BEST clear sound! Love it;=)
Got a nice candelaber with some black lights and even some other candle holders to get that "special atmosphere" for the softer songs;=)
Cosiness gives the right vibe;=)
Nicklas Olle Olsson - the best!;=)
Can´t say more than that I´ve enjoyed both days and Nicklas and me have been a great team as always!
Now time for some sleep with some nice music still buzzing in my head...

Memories;=)
Looking through our wedding/baptising of Nemo and Mio photos I found some nice ones I never posted here and well, here you go;=) (photos taken by Annicka Photography)
LOVE this one! So cute;=) Nemo and the priest where the priest "welcomes" Nemo to the church and showing him the altar, organ and so on;=) It was fun to baptise a bigger child, instead of as with Mio and Seth, a 3 month old. It´s not the same since a bigger child walks and talks but Nemo was very concentrated and the day before we had practised with the priest how things should be done so Nemo was prepared but still, our Nemo is full of energy and play so we didn´t know how he would behave;=)
But he was really so good and did everything perfect!
My shoes were just awesome and there is a fun story behind them too. I was up in Stockholm and walking with Mio in the pram, passing by a boutique where I saw them. And I LOVE everything with stars on so I wanted to go in and buy them but this day Mio was just screaming so I felt I had to skip it.
Back home in Helsingborg I couldn´t stop thinking of the shoes and asked everyone I know who works here in the stores if they knew the brand but no luck.
Finally I called the boutique Mathilde and asked about them and she says: I have one pair left in size 39. And 39 is MY size! So we both said they were probably waiting for me and meant to be on my feet during my wedding as they ended up being;=)
And here´s from the tables which I decorated myself. I used stones with love messages on and also signs with love messages on, pink real rose petals and then as you can see little hard candy´s with "Just married" on them;=)

Two lovely healthy cakes;=)
So, as promised, here´s the two lovely cakes I baked in the weekend, following recipe´s from my favourite baking blogg: bakasockerfritt.se where everything is without sugar and wheat. The thing I have to do from her recipes is to always make the paste bigger to fit my big form but you can choose to just do these smaller ones if your form is the same size as her.
Many times when I bake these healthier cakes the rest of the family aren´t as excited as I am of the taste but this time they were! Nemo LOVES the bean cake and wants it every day;=) And I baked these cakes and had mum and her husband try them and they also approved;=)
So here they are: (recipes borrowed and translated from bakasockerfritt.se)
BEAN CAKE WITH DATES
Ingredients:
50 gram of black beans (soft, ready to eat)
70 gram of fresh dates
1 eg
2 table spoons of shredded coconut
1 table spoon of cocoa flour
1 table spoon of cacao
1 pinch of vanilla powder
2 table spoons of milk (I use unsweetened almond milk)
Put the oven at 150 degrees. Rinse the beans. Put all ingredients in a bowl and mix together with a mixer to a chocolate paste. Put the paste in a buttered 12 cm baking form and bake in the oven for appr. 25 minutes. Serve with whipped cream;=
FALSE SPONGE CAKE WITH BLUEBERRIES
Paste:
25 gram of butter
1 egg
2 table spoons of cream
½ dl almond flour
2 table spoons of potato fiber
2 tea spoons of cocoa flour
1 ½ table spoon of sweetener (I use xylitol)
1 tea spoon of baking powder
1 ½ pinch of vanilla powder
20 gram blueberries
Cocoa coating:
20 gram butter
2 table spoons of cream
appr.1 dl of cocoa flakes
appr. 1 tea spoon of sweetener
Paste
Put the oven at 175 degrees. Mix together all the dry ingredients. Melt the butter. Stir down egg, cream and butter and then carefully put the blueberries in. Place the paste in a small buttered baking form (12 cm)
Cocoa coating;
Boil butter and cream together on a very low temperature until it´s gotten thicker. Stir down sweetener and cocoa flakes and top the cake with it.
Bake the cake in the lower part of the oven for appr. 20 minutes or until the cake starts to look more solid. Serve with cream or sugar free ice cream!

Hi all,
A little throwback thursday with two photos of an outfit from my pregnancy with Mio;=) Love the hair-do, the dress and of course the lovely belly. I must say I look really feminine being pregnant;=)
I´m preparing to sell some more clothes in my vintage store very soon so stay tuned for that;=) Might throw some pregnacny things in there too if someone is pregnant or planning to be;=)

Johan´s Birthday;=)
Good morning everyone!
I´m still fighting the sinus infection and feeling better but still not well so yesterday when it was Johan´s birthday it was just an easy celebration for him but since I celebrated him last saturday with the brunch and some clothes as gifts I believe he was ok with that;=)
I bought amazing sushi for dinner, I baked a chili chocolate cake and me and the kids made him some nice Birthday paintings. Nemo is a left-handed and very creative I must say. He painted this painting below and if you can´t see what it is you must be blind, haha!;=)
Cause of course it´s a dragon to the left blowing out fire, then his castle to the right and even another castle below the dragon. And I like that he also uses the technique of doing little stains/dots there. A new Picasso?
I sure hope you all saw that?;=)
Mio didn´t paint anything yet but he was of course with us, playing with his little cow;=)
And here´s the recipe for the chili chocolate cake, since I got asked to put it here from an Instagram follower:
CHILI CHOCOLATE CAKE (GLUTEN FREE)
100 gram of butter
100 gram of chocolate with chili
1 egg
3 table spoons of xylitol or other sugar free substance
2 table spoons of cacao
1 teaspoon of vanilla powder
1 dl cream
Do like this:
Melt the butter and then add the chocolate in pieces and melt on a slow temperature. Let it cool.
Then add the cacao, vanilla powder and cream and stir.
Whip the egg and the xylitol or stevia together separately to a nice foamy texture.
Add to the chocolate paste.
Butter a cooking form and then put the paste into it and put into the oven at 225 degrees for 6-8 minutes.
When the cake has cooled off a bit, put it in the fridge for some hours and then serve it with whipped cream and maybe some raspberries;=)

My weekend
Hi all,
This weekend had nice both nice moments such as a child-free date with Johan eating a nice brunch at Kitchen & Table on saturday, as well as a doctor´s appointment yesterday to get antibiotics for a bad sinus infection I have at the moment. So high´s and low´s;=)
